Pasco County, FL – Residents of West Pasco County have something exciting to look forward to, as plans for a new dining experience at Anclote River Park are underway. The much-anticipated restaurant, named "Whiskey Fish" or "Whiskey Fish on the Anclote," is set to enhance the park's ongoing remodeling efforts.
Initially submitted between 2021 and 2022, the development plans reveal that Whiskey Fish is envisioned to be akin to the popular RumFish Grill. Interestingly, the new establishment is being brought to life by the same visionary team behind RumFish Grill and the renowned Orange County Choppers restaurant.

Whiskey Fish is not just a restaurant; it's poised to be a culinary and recreational hub. The design includes an indoor bar, indoor and outdoor dining options, and a sundeck, accommodating a total of 548 seats or 108 tables. Patrons can expect two stages for live entertainment – one inside and another in the covered pavilion – adding to the vibrant atmosphere. Moreover, the site will feature a retail section and an outdoor retail hut, broadening the visitor experience.
